27th french toast with breakfast granola I always try to have breakfast every day. It’s our most important meal of the day, kick-starting our digestive system and giving us energy for the rest of the day. Not only do i try to incorporate variety into my breakfast so that i won’t be bored by it, but more importantly it’s so that i get a variety of nutrition. It’s not how much we eat that fuels our energies, it’s what we eat that counts.

Choose healthier options whenever possible, like fresh fruits, wheat or whole grain bread instead of white, good quality honey or Canadian maple syrup (not the “maple flavored syrup”!). This dish makes a lovely weekend breakfast or brunch, and is easy to make in 15 minutes. It’s a nice ‘activity’ to do with your children too. Getting them involved in making this breakfast, letting them choose and decorate their own creations will encourage them to like and polish off everything on their own plates! Just remember to give them healthy topping choices!

Serves 2
Ingredients
Wholemeal or grain bread
3 Eggs
2 Tbsp fresh milk
1 tsp butter (melted)
Pinch of salt
1/2 tsp Cinnamon powder
2 Bananas
2 Tbsp premium muesli
Honey or maple syrup
 
In a shallow bowl, whisk the eggs.
Add melted butter, milk, salt, cinnamon powder and whisk together.
Place a slice of bread in bowl so that both sides of the bread is coated with egg mixture.
When pan or skillet is heated (medium high heat), place coated bread and cook each side for about 20 to 30 seconds each side.
Remove and arrange on 2 plates. Garnish with sliced bananas, sprinkle 1 Tbsp Premium Muesli, top  with honey/maple syrup, sprinkle more cinnamon powder.

The muesli i have used for this dish is an Australian brand which has no added salt, no added sugar, high in fibre and contains rolled oats, wheat bran, dried fruit (sultanas, papaya, dates, pineapple, raisins, currants, apple, apricots), sunflower seeds, buckwheat kernel, linseed, psyllium husk.
